Pav Bhaji


Pav Bhaji is a blend of vegetables which is cooked in spicy masala and tomato gravy and served with roasted pav (Indian bread). It is a popular fast-food recipe in India.


Ingredients

Medium Potatoes (boiled and mashed) - 4
Medium Tomatoes (chopped) - 4
Green capsicum (chopped and deseeded) - 1
Medium Onions (chopped) - 2
Green peas (shelled) - 1/2 cup
Cauliflower (grated) - ¼ small
Garlic - 10 cloves
Ginger (chopped) - 1 inch piece
Green chilies (chopped) - 4
Oil - 3 tbsp
Butter - 3 tbsp.
Salt - To taste Pav
Bhaji masala - 1-1/2 tbsp.
Fresh coriander leaves (chopped) - ¼ cup
Pav - 8
Lemon (cut into wedges) - 2


Preparation method

In salted water, boil green peas till tender, after that drain and lightly mash. Keep aside.

Grind garlic and ginger together to prepare a smooth paste.


In a thick bottomed pan, heat oil and add ¾ quantity of onions.   Then sauté till light brown.


Mix green chilies and garlic-ginger paste. Stir well and fry for a minute.

Put half the quantity of chopped tomatoes and let it cook on medium heat for 5 minutes.   Continuously stir.

Add potatoes, capsicum, cauliflower, mashed peas, and 1-1/2 cup water. Bring this mixture to a bubble and simmer for about 10 minutes.


Mash the vegetables with a back side of spatula, till all the chopped vegetables are mashed completely.


Now add Pav Bhaji Masala, remaining tomatoes, and salt.

Cook on low-medium flame for few minutes and stir continuously.


In a heavy-bottomed pan/tawa, heat half of the butter.


Slice pav into two horizontally and in butter, pan fry till it becomes light brown.
