** Whenever we come to Bangalore, we watch the ever-interesting cook-programs on Telugu channels. This recipe is from one of the channels yesterday (6 Feb 2013).
Ingredients:
Baby corn -- 8 to 10
Potato -- medium size, 3 Nos
Tomato -- 3
Onion --- 2 medium sized,chopped
Green mirchi -- 2
Garlic+Ginger paste -- 1 tbsp
Cumin seeds [jeerakam] -- 1 tsp
Kothamalli -- a little
Oil -- 3 tbsp
Salt to taste
To grind into paste:
onion -- 2
Garlic -- 8 cloves
pudina, coriander leaves
red chilly powder -- 1 tsp
turmeric powder -- 1/2 tsp
green chilly -- 1
coriander powder -- 1/2 tsp
garam masala -- 1tbsp
cashew nuts -- 10
salt to taste.
Method:
Pressure cook potatoes, and baby corn.
Peel potatoes, and cut into small cubes.
Cut baby corns into 2 inch pieces.
Soak tomatoes in boiling water for a few minutes and peel the skin. When cooled, grind into a paste.
Put all the ingredients mentioned in "To grind" in a mixie and grind into paste.
Pour 1 tbsp oil in a kadai and when it is hot, put cumin seeds, let it sputter; add chopped onion and then cut green mirchi. I used butter
Fry, then add Inji-Poondu mix.
Add some more oil and fry.
Add the ground paste of ingredients . Fry for 3 minutes.
Add the tomato paste and fry for 5 minutes.
Then add baby corn pieces and potato cubes.
Add salt, add required water.
Fry till the baby corn and potato are cooked. (nearly 10-12 minutes)
Add sufficient water.
Good for Dosai, Chappati etc.
[If this is the season of green peas, you may add these also after peeling and boiling]
