Spinach Sauce
(Spinach = Paalak)


1 kg spinach, blanched, squeezed, dry and coarsely chopped.
1 cup onion, diced
4 cloves garlic, minced
1 tbsp butter
250 grams cooked noodles, or pasta, or potatoes
Cheese, freshly grated


Heat butter in a pan

Add onion and saute until transparent.

Add garlic and saute for a minute.

Add spinach (paalak) and stir-fry until bright green.

Remove from flame, and cool.

When cool, blend to a paste using a little water if required.

When done, reheat gently and add cooked noodles or pasta or potatoes.

Stir properly so it is well coated.

Serve warm with grated cheese.
