Sprout Soup

Ingredients

1 tbsp olive oil (refined groundnut oil can also be used)
1 cup carrots, diced
1 cup onions, diced
1 cup white gourd (Poosani kai),diced
1 tsp ginger, grated
1 1/2 litre lentil or vegetable stock
2 tbsp chopped fresh  herbs (like kothamalli)
1 cup sprouts
sliced lemon

Method

Over moderate heat, cook all vegetables in the oil until soft.

Add stock, ginger and bayleaf. Bring to a boil.

Pour it in soup bowls or mugs. Top with herbs (kothamalli).

Add a handful of sprouts and a slice of lemon.

Serve.
